When the leaves start to turn and it’s harvest time on the farm, we always have a box of spice cake mix in the cupboard.

Ingredients Needed To Make Pumpkin Apple Cake

  • Box Spice Cake Mix – a carrot cake mix can be used interchangeably if needed.
  • Eggs
  • Pureed Pumpkin
  • Pumpkin Pie Spice
  • Baking Apples – we like Granny Smith, Jonathan, Braeburn, Honeycrisp or another tart to lightly sweet apple.
  • Pecans – chopped or pieces are an optional way to add some crunch and fall flavor.
  • Cream Cheese Frosting – a can or batch of homemade works great.
Ingredients to make pumpkin apple cake are apples, pecans, eggs, pure pumpkin, spice cake mix and cinnamon on a wooden counter top.

Step By Step Instructions

Generously coat a bundt pan with non-stick cooking spray and preheat oven to 350℉.

Using an electric mixer stir together spice cake mix, pureed pumpkin, eggs and pumpkin pie spice.

Once mixed well fold in pecans.

Spoon half of the pumpkin spice batter into the bottom of the bundt pan. Take care to spoon into the center of the pan and then gently smooth to the edges to prevent drips on the side from burning while baking.

Next add a layer of peeled and finely chopped apples.

Then spoon the remaining batter over top and gently smooth out.

Bake for 40 to 50 minutes until a toothpick comes out clean when inserted in the center.

Let cake rest for about 10 minutes after coming out of the oven and then cover with a cooling rack and flip over. Gently tap until cake comes lose and rests on the cooling rack.

Let cool and transfer to a serving platter. Coat with frosting and enjoy!

Ingredients
  

  • 15.25 ounce box spice cake mix
  • 2 eggs
  • 15 ounce can pureed pumpkin
  • 1 teaspoon pumpkin pie spice
  • 2 1/2 cups firm apples coarsely chopped
  • 3/4 cup pecans chopped
  • 16 ounces cream cheese frosting

Instructions

  • Preheat oven to 350℉ and generously grease all sides of a bundt pan.
  • In a medium sized mixing bowl combine cake mix, pureed pumpkin, eggs and pumpkin pie spice.
    15.25 ounce box spice cake mix, 2 eggs, 15 ounce can pureed pumpkin, 1 teaspoon pumpkin pie spice
  • Fold in pecans.
    3/4 cup pecans
  • Pour half of the batter into the bundt pan.
  • Coarsely chop apples. Layer on top of batter. Then pour remaining batter over the apples.
    2 1/2 cups firm apples
  • Bake for 40 to 50 minutes until a toothpick inserted in the center comes out clean. Rest cake for 10 minutes and then invert on a cooling rack.
  • Allow to cool and frost.
