Farmhouse Cinnamon Applesauce Muffins

A cross between a muffin and cupcake, Farmhouse Cinnamon Applesauce Muffins are super moist and really easy to make. The recipe features a light powdered sugar icing drizzle that makes these muffins irresistible!

Sweet Applesauce Muffins

Sweet cinnamon chips make all of the difference in giving a pop of flavor to these moist and delicious applesauce muffins. Drizzle with an easy mixture of confectioners sugar and water for a beautiful glaze that perfectly tops off this muffin!

My son is a picky eater, but he has a sweet tooth for baked goods like these. He makes our Pumpkin Chocolate Chip Applesauce Muffins on his own and I imagine he’ll be doing the same with this version of applesauce muffins. Other delicious treats for the kids are Applesauce Bars and Banana Jumbos.

One of our most popular recipes on Pinterest and in real life is our Cinnamon Applesauce Cake. The ingredients are simple, mix up very quickly and the flavor combination will take your taste buds to a whole new level. Everyone asks for the recipe!

I knew I had to figure out how to adapt this cake recipe to make a muffin. Since we’ve been staying at home for weeks on end and ordering groceries more than ever when these Hersheys Cinnamon Chips popped up on Walmart.com I ordered 3 bags immediately.

To convert my cake to a muffin there were only a few minor changes. Adding another leavening agent, baking powder, to help make the batter rise is the first step. Cutting back just a little on applesauce is the second step to make the dough lighter makes perfectly moist and delicious muffins!

Where to find Cinnamon Baking Chips

I have the best luck finding Cinnamon chips at Walmart. Friends have found them at smaller local grocery stores or specialty stores.

As groceries keep coming in and out of stock if you can’t get the Cinnamon Baking chips right now be sure to save this recipe and make it when the chips are available! I promise this recipe is worth the wait!

When we are allowed to get out and about my mom loves shopping bulk foods stores in Amish areas to find unique baking items like Cinnamon chips.

The shelf life is good for cinnamon chips is good I typically stock up and get a few bags at a time.

Other Helpful Tips

  • I like to use unsweetened applesauce, but sometimes I grab a couple unflavored applesauce pouches from my kids and hope they’re not too sweet
  • I like to grease a muffin baking pan very well and avoid using muffin liners so the icing can drip down the sides, but feel free to use liners if you choose
  • Using my cookie dough scoop or ice cream scoop makes filling the muffin tins easier for me
  • Reserve some chips to add to the top of very warm baked muffins for an added touch, but be sure not to burn your fingers when arranging the chips on warm muffins
  • Muffins should be stored in an airtight container on the counter for up to 3 days
  • Muffins can be stored in the refrigerator for up to 5 days and can be placed in an airtight freezer bags or containers for 3-6 months

How to Make Cinnamon Applesauce Muffins

  • Grease muffin tins well or use liners. Preheat oven to 350°F.
  • Beat softened butter and sugar until well blended. Beat in eggs and vanilla. Stir in applesauce.
  • In a seperate bowl combine flour, baking powder, baking soda, and salt. Gradually add to the butter mixture until well blended.
  • Gently fold in cinnamon chips, while reserving 1/4 cup of chis.
  • Drop into greased muffin tin and bake 14 – 18 minutes until a wooden toothpick inserted in center of muffin comes out clean. Press remaining chips gently into the top of the muffins for an added accent.
  • Allow muffins to cool. Remove from tins.
  • Stir together powdered sugar and enough warm water to make icing your preferred consistency. Drizzle over slightly warm cupcakes. Sprinkle remaining cinnamon chips on top of the muffins and enjoy!

Tips for Drizzling the Icing

A beautiful drizzle of icing gives these muffins excellent eye appeal and an added layer of flavor. With a little practice icing the muffins is so easy!

The first step is to get the icing to the right consistency. Start with 3/4 cup of confections sugar and 1 tablespoon of warm water. Use a tablespoon to stir until the icing is an even consistency.

Lift the tablespoon and inch or two straight above of the bowl. Does the icing dripping back into the bowl create a pattern or design that you like?

Do NOT add the second tablespoon all at once. Add a few drops of warm water at a time until you like the consistency of the icing dripping off of the spoon back into the bowl of icing. I always practice in the bowl before I practice swinging the spoon of icing over the muffins.

I like to ice these muffins while they are sitting very close together on a cooling rack. This is another reason not to use liners, then the icing can drizzle down the sides of the muffins.

Ingredients
  

Muffins

  • 1 cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 2/3 cups Hershey's Cinnamon Chips 10 oz package, reserve 1/4 cup chips

Glaze

  • 3/4 cup confectioners sugar
  • 1 to 2 tablespoons warm water

Instructions
 

  • Grease muffin tins well and preheat oven to 350°F.

  1. I am going to have to keep my eye out for cinnamon chips, my guess is the specialty grocery store across the river might have them. Then I am making these for sure, they look delicious!

  3. Ashery Farms might be called Yoder’s now carrys cinnamon chips. They are in Heath. Great place to get baking supplies and spices.
