Crock Pot Loaded Cauliflower Casserole (Low Carb)

Slow Cooker Cauliflower Casserole
Frozen cauliflower loaded with cream cheese, shredded cheese, bacon and green onions taste so good that even the picky eaters in our family enjoy it! Using the slow cooker makes this side dish easy enough to make on the busiest of days!
Our family loves eating this cauliflower casserole with almost any meat. Grilling plain meat is one of our favorite meals to dress up with this simple side dish. I’ve made the oven version for parties and the crowds raved, so I will be making this crock pot version when asked to bring a vegetable side dish in the future. We like plain meat because this dish brings so much flavor and is often the star of the meal!

This dish is not the cooked cauliflower that you remember as a kid being plain and boiled. My husband said this dish is so good you barely know there’s cauliflower there! In fact we adapted it to make Crock Pot Buffalo Bacon Cauliflower.
Ingredients Needed:
- Frozen Cauliflower
- Cream Cheese
- Mozzarella Cheese
- Cheddar Cheese
- Bacon Bits
- Green Onions
Keto Loaded Cauliflower Casserole Recipe
- Pour half of the cauliflower in an even layer in the crock.
- Cut cream cheese into strips or cubes and layer half on cauliflower.
- Sprinkle half of shredded cheese and bacon bits over frozen cauliflower.
- Repeat by layering remaining cream cheese.
- Then sprinkle remaining shredded cheese and bacon on top.
- Stir once or twice while cooking.
- Cook on low for 3 to 4 hours.
- Sprinkle green onions on top and serve.

Tips for Making Low-Carb Loaded Cauliflower Casserole
- Use frozen cauliflower for convenience and a better value
- Cut cream cheese into small cubes or thin strips to help spread out creaminess as much as possible
- If using a large crock pot just make one layer of ingredients and know this may affect cooking time
- A small crock pot works better so that cheese doesn’t fall below the cauliflower and burn
- Feel free to bake or fry your own bacon, we use precooked bacon bits simply for convenience
- This recipe reheats well and can be stored in the refrigerator for 2 – 3 days

How to Make Crock Pot Loaded Cauliflower Casserole
Begin by laying out all of the ingredients. If possible I try to let the cream cheese soften a little bit before making the casserole.

Grease the crockpot with a non-stick spray or use a liner to make clean-up easier.
The cauliflower should be in a single layer and as close together as possible. Avoid using a large crockpot that leaves a lot of gaps between the cauliflower as the cheese will fall through.
Use a spoon to add dollops of cream cheese over as many pieces of cauliflower as possible.

Sprinkle mozzarella cheese, cheddar cheese and bacon bits on top of the frozen cauliflower and cream cheese.

Add remaining frozen cauliflower and repeat layers in the crock.

Turn crock pot to low and cook for 3 to 4 hours. Stir once or twice while cooking and before serving to help the cheeses all mix together well.
Chop up green onions and sprinkle over the top. Serve warm and enjoy!

Ingredients
- 24 ounces frozen cauliflower
- 4 ounces cream cheese
- 1 cup mozzarella cheese
- 1 cup cheddar cheese
- 3 ounces bacon bits
- 2-3 green onions diced
Instructions
- Use a slow cooker liner or grease crock.
- Pour half of cauliflower in an even layer in the crock. Cut cream cheese into strips or cubes and layer half on cauliflower. Sprinkle half of shredded cheese and bacon bits over frozen cauliflower.
- Repeat by layering cauliflower, cream cheese and then sprinkling shredded cheese and bacon on top.
- Cook on low for 3 to 4 hours. Stir once or twice while cooking.
- Sprinkle green onions on top and serve.

Hey There! If using a purchased bag of bacon bits I think it’s about 1/2 a cup. If cooking and crumbling yourself it’s about 3 to 4 strips. Hope you enjoy!
