Peanut Butter S’mores Cake

Our family LOVES this rich Peanut Butter S’mores Cake all year around! Mini peanut butter cups add a wonderful surprise to the graham cracker and marshmallow cream layers. This s’mores cake is easy to make and always a crowd pleaser!
Peanut Butter S’mores Cake Recipe
Camping and hanging out around a campfire can be so fun. This S’mores Cake reminds us of campfires and good times even when we’re inside. Our Gooey Smores Cake is so good we wanted to think about how to put a spin on that amazing recipe. That’s when we realized we had to make it with mini peanut butter cups!
Another similar recipe that more like a cookie bar than a cake is our Easy S’mores Bars. They would taste great with mini peanut butter cups sprinkled on top in place of the chocolate chunks.
The s’mores cake batter looks like a super soft graham cracker. Layers of a graham cracker crust, peanut butter cups, marshmallow fluff topped with another layer of graham cracker cake dough are amazing. When the cake is still warm it is so gooey and tastes just like a warm s’more. The warm cake requires a plate and fork. As the cake cools off it is much easier to cut into pieces that can be picked up and eaten.

We love easy cakes, so it’s logical that we could take a classic s’more and make an easy cake out it! The s’mores cake is great because the pieces can be cut into any size. Tiny pieces for the really responsible people. Larger pieces for the active kids that burn tons of energy and s’more size pieces for everyone else!
The first time we made this cake was as a special Mother’s Day treat. We knew that our moms would love it too! Regardless of the weather, this s’mores cake is AMAZING!
How to Make a Peanut Butter S’mores Cake
- Cream butter and sugars, add egg and vanilla.
- Mix in flour and graham cracker crumbs then divide dough in half
- Use fingers to press half of dough evenly into a greased 13 x 9 inch baking pan
- Sprinkle a lot of Reese’s mini peanut butter cups over the dough
- Spread the marshmallow creme as evenly as possible with a butter knife, try not to scoot the peanut butter cups around too much
- Crumble remaining half of dough across the top
Tips for Making a S’mores Cake
- Soften butter on the counter for up to two hours before making the cake
- Use purchased graham cracker crumbs OR crush graham crackers yourself, but ensure crumbs are very small and of equal size
- Spread second half of graham cracker batter on top of marshmallow fluff layer by breaking into small pieces with your fingers and crumbling as evenly as possible over the top of the cake
- Reese’s minis and miniature cups are different – we like the tiny minis best in this recipe because they are not individually wrapped

Peanut Butter S’mores Cake

- 1 cup butter softened
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 2/3 cups flour
- 1 teaspoon salt
- 1 1/2 cups graham cracker crumbs
- 15 ounces Reeses mini peanut butter cups
- 14 ounces marshmallow creme
Instructions
- Grease a 13 x 9-inch baking dish and preheat oven to 350 degrees F. Cream butter and sugars. Agg egg and vanilla, mix well.
- Combine flour, salt and graham cracker crumbs. Add to butter mixture and mix well.
- Divide dough in half and press one half into baking dish.
- Sprinkle mini peanut butter cups evenly over the dough. Spread marshmallow creme evenly over creme.
- Crumble the remaining dough into small pieces over marshmallow creme. Pat down gently after crumbling. Bake for 30 – 35 minutes or until golden brown and puffed.
