Best Instant Pot Mozzarella Chicken

Adding a thick layer on top mozzarella on top of a lean chicken breasts creates a healthy, flavorful meal in the Instant Pot.

Instant Pot Chicken Mozzarella Recipe

Moist chicken breasts are super easy to make in the Instant Pot.  The fresh mozzarella, balsamic vinegar, mushrooms, and onions add a lot of flavors and make an excellent and easy family dinner!

This family meal with chicken is low-carb and keto which can help cut calories.  Instant Pot Mozzarella Chicken has a great Italian flavor with the balsamic flair and fresh basil sprinkled on top.

I found lightly dried basil in the refrigerated produce section at Kroger that was already chopped.  We love the fresh flavor that sprinkling basil on top of the chicken adds just before serving.

Easy Low-Carb Instant Pot Chicken Recipe

Chicken breasts smothered in mozzarella cheese and served on a bed of mushrooms and onions makes an excellent and filling low-carb Instant Pot meal.  The balsamic vinegar really gives this chicken a full flavor that is enjoyable, but not overwhelming.

Can You Stack Chicken in Instant Pot

I have had the best results by placing chicken in an even layer.  If I did cook more than one layer I would not fill above the max fill line and I would make the layers as even across the entire Instant Pot as possible.  Additional layers will likely mean additional cook time and additional liquid.

A solution to avoid stacking chicken in an Instant Pot for this recipe is to cut chicken breasts into smaller pieces to fit more meat in one layer.  This would be a way to increase the amount of chicken made for the meal without having to stack chicken breasts.

How Long to Cook Chicken in Instant Pot

Three plain chicken breasts that are defrosted can be cooked for 5-6 minutes in the Instant Pot.  Use the trivet so that liquid can circulate around the chicken during the pressure cook time.

When making the Instant Pot Mozzarella Chicken Breasts the chicken sit on mushrooms and onions.  The vegetables allow room for the liquid to circulate around the pot, but they also add more bulk which increases the cooking time.  So I cook three chicken breasts and vegetables for 7 minutes in this recipe.

If you’re concerned about getting the chicken cooked through use a meat mallet and flatten the thickest part of the chicken breast.  This makes the chicken cook more evenly.  I don’t have a meat mallet yet and found that 6 minutes is great for plain chicken and 7 minutes works better when adding vegetables.

Tips for Making Mozzarella Chicken in the Instant Pot

  • Fully defrosted chicken breasts work best in this recipe
  • Set chicken out of the refrigerator for about 30 minutes prior to cooking to come to room temperature
  • If omitting mushrooms and onions cook chicken on the trivet
  • Always use natural release when cooking fresh meat
  • Wait until pressure cooking time is over before adding cheese, return the lid to seal in heat and allow cheese melt
  • All cooking appliances and conditions are different, so you should test these times and guidelines first in your own appliance to determine what adjustments may be needed!

Best Instant Pot Mozzarella Chicken

Ingredients
  

  • 2 – 3 tablespoons olive oil
  • 3/4 cup onion sliced
  • 8 ounces mushrooms sliced
  • 3 chicken breasts boneless & trimmed
  • 1/2 cup chicken broth
  • 3 tablespoons Balsamic vinegar
  • 3 slices mozzarella cheese about 1/4 inch thick
  • 2 tablespoons fresh basil

Instructions
 

  • Set Instant Pot on saute setting.  Add oil.  Add onions and mushrooms and saute until the onions are tender.
  • Pour broth and vinegar over vegetables.  Add fresh or thawed chicken breasts to the Instant Pot and spread evenly over the pot.  Lock lid and cook on high pressure for 7 minutes.  Natural release for 10 minutes.
  • Remove lid and add slices of mozzarella to the top of the chicken.  Replace lid and allow the cheese to melt about 2-3 minutes.  Serve warm.
