Egg, Sausage and Brioche Breakfast Casserole

Brioche bread and maple sausage make a sweet and easy twist on a classic breakfast casserole. Egg, Sausage and Brioche Breakfast Casserole can be baked immediately or made ahead as an overnight casserole. This recipe is sure to draw people out of bed and start the day well!
Brioche Breakfast Casserole
Our Egg & Sausage Casserole is super easy and a classic favorite. Just like our Oatmeal Waffles, it’s a solid recipe to use any day of the week, for the main dish in any meal.
When we want to dress up our breakfast casserole a bit we go to this sweeter version with maple sausage and brioche bread. This is a classic recipe with a sweeter twist. Sometimes we make this casserole for Christmas morning or for brunch when hosting weekend guests.
Whether you’ve got a bunch of eggs to use, a bunch of people to feed or a bunch of breakfast meals to plan this recipe fits the bill! We use almost any cooked breakfast casserole for meal prep.
Individually sized serving pieces can be wrapped in a paper towel and placed in a freezer bag. Reheat in the microwave as needed for a quick breakfast on the go!
I’ve mixed this brioche breakfast casserole up to sit overnight and I’ve mixed it up to bake immediately. This is a versatile recipe because it works as an overnight casserole or a quick casserole that can be made without planning.
Our family also loves how easy it is to switch out ingredients and change the flavor. Using different spices in sausage is the easiest way to change the flavor of this casserole. Add some cheese with a complimentary flavor and wheat or white bread and enjoy!
Is This an Overnight Casserole?
This casserole can be mixed up, covered and placed in the refrigerator overnight to be baked the next morning. This casserole can also be mixed up and baked immediately. So do what works into your schedule. It can be nice to have the dishes cleaned up and put away. Sometimes planning ahead takes more energy than I have, so we just mix it up and bake.
If refrigerated overnight set the casserole out on the counter to warm up a bit while the oven is preheating. Also note that baking a cold casserole will take longer than baking a casserole at room temperature.
The key to success with this recipe is preventing a soggy casserole. Fresh bread will become soggy, but dried bread will bake well and make a fantastic breakfast casserole.
How to Make Sweet Brioche Breakfast Casserole
- Scramble eggs with fork in a large bowl
- Mix all ingredients together
- Pour into a greased 9 x 13 inch pan and bake for 30 – 40 minutes in a 350º oven until center is set
Tips for Making Breakfast Casserole
- Make sure bread has been dried out before adding to the casserole
- I like to dry bread by leaving out on the counter for the day, but a broiler or toaster can be used
- If bread is not dried the casserole is more likely to be soggy
- Scramble eggs before mixing together with other ingredients
- Sausage may add enough flavor so make the salt is needed before adding
- We prefer Colby jack cheese with a more mild flavor since the brioche bread and sausage bring such distinct flavors

Egg, Sausage and Brioche Breakfast Casserole

- 10 eggs
- 1 pound maple sausage cooked, crumbled and drained
- 1 1/4 cups colby jack cheese
- 1 teaspoon salt optional
- 3 slices brioche bread cubed & dried
- 2 1/4 cups milk
Instructions
- Grease a 9 x 13 baking pan and preheat oven to 350°F.
- In a large bowl scramble eggs with a fork or whisk.
- Stir remaining ingredients into eggs.
- Pour in baking pan and bake for 30 – 40 minutes until center of casserole is set.

This looks so good, but only 3 slices of bread? That doesn’t seem like much. Thank you!
Good point! I like to use the Sara Lee Artesano bread and those slices are pretty thick. If it was a cheaper store brand bread you may want 4 or 5 slices. I hope you love the recipe!
Great point! I like to use Sara Lee Artesano Brioche bread which is sliced fairly thick. Store brand breads are often sliced a bit thinner and 4 to 5 slices of another brand may be more appropriate. I hope you love the recipe!
