- 12 ounces SPAM
- 3 tablespoons vegetable oil
- 3 eggs
- 1/2 cup peas and carrots
- 1/4 cup red bell pepper chopped
- 2 cups uncooked white rice
- 1/4 cup soy sauce
- 2 green onions sliced
Cook rice.

Slice spam and then chop into small cubes.

In a large skillet turn to medium high heat and add 1 tablespoon of oil to a hot skillet.
3 tablespoons vegetable oil
Brown spam in the oil then set aside on a separate plate.
Crack eggs in the skillet and chop while cooking. Once cooked set aside with the browned spam.

Add remaining oil to the skillet and heat. Cook vegetables 2 to 3 minutes until softened.
1/2 cup peas and carrots, 1/4 cup red bell pepper
Turn to medium heat and add cooked rice and soy sauce to the skillet. Stir well.

Add eggs and spam to the skillet, stir again.
Slice green onions and sprinkle over warm fried rice. Serve and enjoy.
