2tablespoonsolive oilenough to lightly coat cauliflower
1/3cupgrated parmesan cheese
1/2cupItalian style bread crumbs
Instructions
Preheat oven to 425°F.
Wash cauliflower and let dry. Cut into small, evenly sized florets or pieces.
Place cauliflower in a large mixing bowl or gallon sized plastic bag. Drizzle olive oil over the top and stir or shake to coat with oil.
Add cheese and bread crumbs and stir or shake until the cauliflower is evenly coated.
Arrange in a single layer on a baking sheet. Roast for 25 minutes, stir mid-way through roasting so that the vegetables roast evenly. Cauliflower will be tender and golden brown when done roasting.
