Old-Fashioned Pineapple Cake

This old-fashioned cake recipe has plenty of crushed pineapple in each bite and is coated with delicious cream cheese icing. Also known as Amish Cake and The Best Cake recipe, this one came from my grandma's recipe box and is found in countless church cookbooks.

Ingredients

Cake

  • 2 eggs
  • 2 cups granulated sugar
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 20 ounce can crushed pineapple with juice in heavy syrup
  • 3/4 cup chopped walnuts optional

Icing

  • 8 ounces cream cheese softened
  • 1/4 cup butter softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1/4 cup walnuts to sprinkle on top optional

Instructions

  • Preheat oven to 350 degrees F. Coat a 9 x 13" pan with non-stick baking spray.
  • In a medium sized mixing bowl beat together eggs, sugar and vanilla.
    2 eggs, 2 cups granulated sugar, 1 teaspoon vanilla
  • Mix in remaining ingredients including pineapple and all of the juice until well blended. 
    2 cups all-purpose flour, 2 teaspoons baking soda, 20 ounce can crushed pineapple with juice, 3/4 cup chopped walnuts
  • Bake 40 - 45 minutes until a toothpick inserted in the center comes out clean.
  • Once the cake is cool, mix together the icing ingredients and spread on cake.  Sprinkle with walnuts if desired.
