Easy Pulled Pork Nachos

Crunchy tortilla chips loaded with bbq pork, black beans, corn, chopped onions and tomatoes make delicious Pulled Pork Nachos.

Ingredients

  • 1 pound BBQ pulled pork
  • 6 ounces tortilla chips we prefer round chips
  • 1 cup black beans drained and rinsed
  • 1 cup corn
  • 3/4 cup Monterey jack cheese shredded
  • 1 cup Mexican cheese shredded
  • 1/2 cup red onions diced
  • 3/4 cup cherry tomatoes chopped

Instructions

  • Preheat oven to 400°F.  Warm pre-cooked pulled pork in a skillet adding as much bbq sauce as desired. Allow pork to caramelize a bit on the edges for the most flavor.
    1 pound BBQ pulled pork
  • Cover a baking sheet with foil and arrange a layer of tortilla chips along the bottom.
    6 ounces tortilla chips
  • Add warm pulled pork. Then sprinkle corn and black beans on top.
    1 cup corn, 1 cup black beans
  • Layer Mexican and Monterey jack cheese.
    1 cup Mexican cheese, 3/4 cup Monterey jack cheese
  • Top with onions and tomatoes.
    1/2 cup red onions, 3/4 cup cherry tomatoes
  • Bake for about 10 minutes until cheese is melted.  Serve warm.

Notes

  • A cast iron skillet is best because pulled pork can caramelize a bit on the edges.
  • Serve with sour cream, salsa, avocados and bbq sauce if desired.
