Ingredients

  • 1 box yellow cake mix
  • 3.4 ounce instant vanilla pudding mix
  • 4 eggs
  • 1 1/3 cup water
  • 1/4 cup vegetable oil
  • 2 cups coconut
  • 1 cup chopped walnuts

Instructions

  • Preheat oven to 350℉ and coat a 9 x 13" pan OR 3 - 8" round pans with non-stick cooking spray.
  • Blend box of cake mix and small box of instant vanilla pudding.
    1 box yellow cake mix, 3.4 ounce instant vanilla pudding mix
  • Add eggs, water and vegetable oil. Beat at medium speed for 2 minutes.
    4 eggs, 1 1/3 cup water, 1/4 cup vegetable oil
  • Add coconut and chopped walnuts and mix by hand.
    2 cups coconut, 1 cup chopped walnuts
  • Pour into pan and bake for 35 - 40 minutes until a toothpick inserted in the center comes out clean.
