Easy Amish Meatloaf

One of our favorite ground beef recipes is this super easy Amish Meatloaf with oats and tomato juice. This recipe creates a delicious family meal with less than 15 minutes of work.

Ingredients

  • 2 pounds lean ground beef
  • 1 1/3 cup tomato juice
  • 1 cup quick oats
  • 2 eggs beaten
  • 1 medium onion chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Sauce

  • 3 tablespoons brown sugar
  • 1/3 cup ketchup
  • 1 teaspoon dry mustard

Instructions

  • Preheat oven to 350°F.  Combine ground beef, tomato juice, oats, eggs, onion, salt and pepper. Mix gently but thoroughly. 
  • Press into 8" x 8" baking dish.  Spread sauce over the meatloaf and bake uncovered for one hour. 
  • Drain if needed.  Let rest for 5 minutes before serving.
