Chocolate Chip Oatmeal Cookies

Like a granola bar in cookie form, these soft and chewy Chocolate Chip Oatmeal Cookies taste great any time of the year. 
The ultimate soft and chewy oatmeal cookie features several chocolate chips stirred in and a few sprinkled on top for an easy cookie recipe that not many can resist.

Ingredients

  • 1 1/4 cups butter softened
  • 3/4 cup brown sugar firmly packed
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups old-fashioned oats
  • 12 ounces semi-sweet chocolate chips
  • 3/4 cup chopped nuts optional

Instructions

  • Preheat oven to 375°F.
  • Beat together butter and sugars until light and fluffy. Beat in egg and vanilla.
  • Combine flour, baking soda and salt. Gradually add to sugar mixture and continue mixing until thoroughly blended.
  • Stir in oats, chocolate pieces and nuts if desired.
  • Drop by rounded spoonful onto ungreased cookie sheet. Bake 9 to 11 minutes.
  • Cool 1 minute on cookie sheet; remove to wire cooling rack. Store in air tight container.

Notes

  • Old-fashioned or quick oats can be used but we prefer quick oats because they have a finer texture and make the cookies so chewy!
  • Butter rules. The best cookies always use butter instead of margarine to maximize quality, flavor and help make each morsel soft.
  • Walnuts are our favorite nuts to mix in these oatmeal cookies.
  • Hold back a few chocolate chips to sprinkle on top of the cookies before baking for a more chocolatey look and taste.
  • Semi-sweet chocolate chips are called for in the original vintage recipe and have a slightly more bitter flavor than milk chocolate chips which are smoother and a bit sweeter. Either type of chip can be used. I love using dark chocolate chips in these Dark Chocolate and Oatmeal Cookies.
  • Using a cookie scoop typically makes fewer cookies that are bigger. A regular scoop makes about 35 cookies and dropping by rounded teaspoon full makes 6 dozen cookies.
