Salad
6ouncepackage wild rice mix
2cupschickencooked, shredded & chopped
1/2cupdried cranberries
1Granny Smith applepeeled, cored and diced
1mediumcarrotgrated or diced
Dressing
1/3cupWhite Balsamic Vinegar
1/4cupolive oil
1/4teaspoonsalt
1/4teaspoonpepper
Toppings
1/4 cupgreen onionsliced
2ouncessliced almonds
Instructions
Cook rice according to package directions. Cool.
6 ounce package wild rice mix
In a large mixing bowl stir together chicken, rice, cranberries, apple and carrot.
2 cups chicken, 1/2 cup dried cranberries, 1 Granny Smith apple, 1 medium carrot
Mix together dressing ingredients, add to the salad and stir well.
1/3 cup White Balsamic Vinegar, 1/4 cup olive oil, 1/4 teaspoon salt, 1/4 teaspoon pepper
Cover and chill for at least 8 hours. Sprinkle almonds and green onions on top just before serving.
