Chicken and Wild Rice Salad

Break away from the usual chicken dinner routine with this easy Chicken and Wild Rice Salad recipe. Loaded with crisp apples, sweet dried cranberries, and crunchy carrots tossed in a light white balsamic dressing.

Ingredients

Salad

  • 6 ounce package wild rice mix
  • 2 cups chicken cooked, shredded & chopped
  • 1/2 cup dried cranberries
  • 1 Granny Smith apple peeled, cored and diced
  • 1 medium carrot grated or diced

Dressing

  • 1/3 cup White Balsamic Vinegar
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Toppings

  • 1/4 cup green onion sliced
  • 2 ounces sliced almonds

Instructions

  • Cook rice according to package directions. Cool.
    6 ounce package wild rice mix
  • In a large mixing bowl stir together chicken, rice, cranberries, apple and carrot.
    2 cups chicken, 1/2 cup dried cranberries, 1 Granny Smith apple, 1 medium carrot
  • Mix together dressing ingredients, add to the salad and stir well.
    1/3 cup White Balsamic Vinegar, 1/4 cup olive oil, 1/4 teaspoon salt, 1/4 teaspoon pepper
  • Cover and chill for at least 8 hours. Sprinkle almonds and green onions on top just before serving.
    1/4 cup green onion, 2 ounces sliced almonds
