Cheesy Beef Goulash

A combination of beans, pasta, meat and tomatoes this hearty one skillet meal for Goulash with tomato juice can be made in under 30 minutes.

Ingredients

  • 1/2 lb lean ground beef
  • 1/2 cup onions chopped & uncooked
  • 14.5 oz can stewed tomatoes undrained
  • 1-1/2 cups tomato juice
  • 2 oz green chiles
  • 1 tsp chili powder
  • 1 cup elbow macaroni uncooked
  • 15.5 oz canned pinto beans rinsed & drained
  • 1/4 cup low-fat, shredded cheddar cheese

Instructions

  • Warm skillet over medium-high heat, add olive oil.  Cook beef and onion until meat is browned, stirring and breaking up meat with a spoon as it cooks.  Drain off fat, if applicable.
    1/2 lb lean ground beef, 1/2 cup onions
  • Stir in undrained tomatoes and their juice, tomato juice, chili peppers & chili powder; bring mixture to a boil.
    14.5 oz can stewed tomatoes, 1-1/2 cups tomato juice, 2 oz green chiles, 1 tsp chili powder
  • Stir in macaroni and beans; return to a boil.  
    1 cup elbow macaroni, 15.5 oz canned pinto beans
  • Reduce heat, cover and simmer until macaroni is tender, about 15 minutes. Spoon chili into bowls and sprinkle with cheese. Yields about 1 cup chili and 1 tablespoon cheese per serving.  
    1/4 cup low-fat, shredded cheddar cheese
