White Beans and Sausage Skillet

Simple ingredients of white beans, kale and red onions mix together with flavorful Smoked Sausage to make a one skillet dinner that turns out great every time!

Ingredients

  • 14 ounces Smoked Sausage
  • 2 tablespoons vegetable oil
  • 3/4 cup red onion choppped
  • 2 teaspoons minced garlic
  • 1 1/2 cups chicken broth
  • 5 ounces kale chopped
  • 30 ounces white beans - cannellini or great northern drained and rinsed
  • 1/2 teaspoon coarse salt optional
  • 1/2 teaspoon pepper
  • 1/4 cup Parmesan cheese grated or shredded

Instructions

  • Add oil to a skillet set to medium high heat. Once oil is glistening and hot add slices of sausage to the skillet. Flip often until cut edges are lightly browned. Then set aside on a plate.
    2 tablespoons vegetable oil, 14 ounces Smoked Sausage
  • Turn heat down to medium. Add onions and garlic to the oil remaining in the skillet. Cook until tender and golden brown.
    3/4 cup red onion, 2 teaspoons minced garlic
  • Pour broth in the skillet and bring to a simmer. Season with salt and pepper.
    1 1/2 cups chicken broth, 1/2 teaspoon pepper, 1/2 teaspoon coarse salt
  • Add kale, cover and cook for 3 minutes.
    5 ounces kale
  • Add beans to the skillet, stir and cover. Cook for 3 minutes until beans are warmed through.
    30 ounces white beans - cannellini or great northern
  • Add sausage back to the skillet, stir, sprinkle Parmesan cheese on top, and serve warm. Enjoy!
    1/4 cup Parmesan cheese

Notes

  • 5 ounce of Kale is roughly equal to 4 cups pressed or 5 cups loose when measured
