Sweet Potato Dump Cake

Mashed sweet potatoes are enhanced with a box of cake mix to create this easy Thanksgiving dessert called Sweet Potato Dump Cake.

Ingredients

  • 3 sweet potatoes
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup butter divided
  • 1/3 cup milk
  • 1 tablespoon nutmeg
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon cinnamon
  • 1 tablespoon vanilla extract
  • 15 ounce box yellow cake mix

Instructions

  • Peel sweet potatoes and cut into 1/2' thick disks. Boil until sweet potatoes are soft and easy to smash. Drain and mash well.
  • Add sugar, brown sugar, 1 stick of melted butter, milk, nutmeg, pumpkin pie spice, cinnamon and vanilla to the mashed sweet potatoes and stir well.
  • Pour into a lightly greased 9 x 13" pan or use two round cake pans.
  • Sprinkle box of cake mix on top.
  • Cut remaining stick of butter into thin slices and spread out on top of the cake mix.
  • Bake in a 350℉ preheated oven for 30 to 40 minutes until the cake mix is golden brown and baked through.

Notes

  • During baking if cake mix or flour is visible on top pour or spoon extra melted butter in those spots to help them soften, bake and brown.
