This easy Sausage and Potato Skillet has been a longtime family favorite meal! Kielbasa, frozen potatoes O'Brien and broccoli topped with cheese makes a delicious one-skillet meal that is also great for meal prep!

Ingredients
3tablespoonsolive oil
2teaspoonsgarlicminced
1poundKielbasa or Smoked Sausagecut into bite sized pieces
1bagfrozen broccolior 4 cups of fresh broccoli
1bagfrozen potatoes O'Brien
1cupshredded sharp cheddar cheese
saltoptional

Instructions
Heat oil over medium-high heat in a large skillet.
3 tablespoons olive oil
Brown pieces of smoked sausage on each side, when browned set aside on a clean plate.
1 pound Kielbasa or Smoked Sausage
Ensure there is still oil in the skillet, add garlic, potatoes and broccoli, cover.
2 teaspoons garlic, 1 bag frozen broccoli, 1 bag frozen potatoes O'Brien
Stir occasionally until the potatoes and broccoli are cooked. Add oil if needed to prevent burning during the cooking process.
Season with salt and pepper if desired.

When potatoes and broccoli are soft, no longer frozen and cooked to the desired doneness return sausage to skillet and sprinkle cheese over top. Takes 15 - 20 minutes to cook. Serve warm.
