Old Fashioned Peanut Butter Cookies

Ingredients

  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/4 cup flour
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 3/4 tsp salt

Instructions

  • Preheat oven to 350℉.  Use a non-stick liner or ungreased baking sheet.
  • In a small bowl mix together flour, baking soda, baking powder and salt.

  • In a large mixing bowl combine shortening, peanut butter, granulated sugar, and brown sugar with handheld mixer on medium until smooth.

  • Add egg and mix well.

  • Add half of the dry ingredient mixture and mix on low speed until combined.
  • Form balls by rolling with clean hands and roll in a small dish of granulated sugar.
  • Arrange on a cookie sheet.  Use a fork to flatten a bit and make criss cross shape in the top of the cookies. 
  • Bake for 7-9 minutes to reach desired doneness.
