- 1/2 cup shortening
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1 1/4 cup flour
- 1/4 tsp baking soda
- 1/2 tsp baking powder
- 3/4 tsp salt
Preheat oven to 350℉. Use a non-stick liner or ungreased baking sheet.
In a small bowl mix together flour, baking soda, baking powder and salt.

In a large mixing bowl combine shortening, peanut butter, granulated sugar, and brown sugar with handheld mixer on medium until smooth.

Add egg and mix well.

Add half of the dry ingredient mixture and mix on low speed until combined.
Form balls by rolling with clean hands and roll in a small dish of granulated sugar.
Arrange on a cookie sheet. Use a fork to flatten a bit and make criss cross shape in the top of the cookies.
Bake for 7-9 minutes to reach desired doneness.
