2cupsquick oats
1cupbrown sugar
1teaspoonbaking soda
1 1/2cupsflour
1/2teaspoonsalt
1/2cupcoconutoptional
1cupbuttersoftened, but NOT melted
Filling
1cansweetened condensed milk
1/3cuppeanut butterI prefer creamy
Topping
1cupchocolate chips
1cupM&MsI prefer mini M&Ms
Instructions
Grease a 9x13 baking pan and preheat oven to 350°F.
Mix oatmeal, brown sugar, baking soda, flour, salt, coconut.
Use a fork or pastry blender to cut butter into the dry mixture until crumbly. Reserve 1 1/2 cups of crumb mixture.
Press crumb mixture into baking dish and bake for 10 minutes.
Combine sweetened condensed milk and peanut butter. Spread over baked crust.
Sprinkle chocolate chips and M&Ms evenly over top of oatmeal bars.
Sprinkle reserved crumbs and bake 20 minutes or until golden brown.
