Loaded Chicken and Potato Casserole

- 3 pounds unpeeled potatoes baked I prefer Yukon Gold - about 10 medium potatoes
- 2 cups chicken
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 cups sour cream
- 3/4 pound bacon cooked and chopped
- 1 1/2 cups Monterey Jack cheese shredded
- 1 1/2 cups cheddar cheese shredded
- 5 green onions chopped
Preheat oven to 350°F. Grease 9x13 inch baking dish.
Cut cooked chicken and potatoes into cubes that are smaller than bite sized pieces.
Place half of potatoes in baking dish.
3 pounds unpeeled potatoes baked
Spread half of sour cream, salt, pepper over the potatoes.
1/2 teaspoon salt, 1/2 teaspoon pepper, 1 1/2 cups sour cream
Sprinkled half of the chicken on top.

Then add cheeses and bacon evenly on top of the chicken.
1 1/2 cups Monterey Jack cheese, 1 1/2 cups cheddar cheese, 3/4 pound bacon
Repeat layers and bake uncovered for 20 - 25 minutes or until cheese is melted and entire dish is warmed through.
Sprinkle with sliced green onions and enjoy!
