Kielbasa and Cabbage

Coins of gently browned Kielbasa, a popular smoked sausage, served on cooked cabbage with bell peppers and seasonings makes an easy and delicious meal!
Kielbasa and Cabbage is a simple recipe that can be made in the skillet, crock pot or as a sheet pan meal to make a great keto or low-carb dinner option.

Ingredients

  • 1 pound Kielbasa cut into coins
  • 2 - 3 tablespoons vegetable oil
  • 1/2 head cabbage sliced thin
  • 1/2 red pepper chopped
  • 1/2 yellow pepper chopped
  • 2 tablespoons red wine vinegar
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon pepper freshly ground

Instructions

  • Heat 1 - 2 tablespoons of vegetable oil in a skillet over medium high heat. Brown coins of Kielbasa on each side and set aside on a paper towel lined plate.
    2 - 3 tablespoons vegetable oil, 1 pound Kielbasa
  • Add 1 tablespoon of oil to skillet if needed then add cabbage, peppers and red wine vinegar. Season generously with salt and pepper. Then cover and cook over medium heat for 8 - 10 minutes.

  • Add oil if skillet looks dry or cabbage is beginning to brown. Stir well and continue cooking over medium to medium low heat for another 5 - 10 minutes until cabbage reaches desired tenderness.
  • Return Kielbasa back to the skillet and serve warm. Additional salt and pepper may be needed to season cabbage at the table. Enjoy!

  • Arrange coins or chunks of Kielbasa in a single layer in a skillet to brown
  • Cooking time will vary based on the thickness of the slices of cabbage
