This old-fashioned favorite Hot Chicken Casserole is a simple meal to make and makes dinner time easy and delicious!

Ingredients

  • 3 cups cooked chicken diced
  • 10.5 ounce can cream of chicken soup
  • 1 cup celery diced
  • 2 tablespoons lemon juice
  • 1 cup rice cooked
  • 1 tablespoon onion grated
  • 8 ounce can water chestnuts drained
  • 2/3 cup mayonnaise
  • 3 hard boiled eggs

Topping

  • 2 cups Ritz crackers crushed
  • 1/2 cup butter melted
  • 1/2 cup almonds

Instructions

  • Preheat oven to 325°F and prepare a 9 x 13" pan.
  • Mix all casserole ingredients except eggs together. Pour half of the mixture into the greased baking dish.
  • Slice the eggs and layer over the mixture.
  • Then pour remaining mixture over the top.

Topping

  • Sprinkle almonds over the casserole.
  • Crush crackers and mix in melted butter then spread over almonds.
  • Bake until brown and bubbly approximately 30 - 45 minutes.
