Fruit Pizza
Fresh fruit with a sweet glaze sits on white chocolate and cream cheese frosting on a sugar cookie crust that makes an unforgettable Fruit Pizza.

Crust
- 3/4 cup butter softened
- 1/2 cup confectioners' sugar
- 1 1/2 cup all-purpose flour
Frosting / Filling
- 12 ounces vanilla baking chips
- 1/4 cup whipping cream
- 8 ounces cream cheese softened
Fruit
- 20 ounces pineapple chunks drained & reserved 1/2 cup juice
- 1 pint strawberries sliced
- 11 ounces mandarin oranges drained
- 2 kiwi fruit peeled and sliced
Glaze
- 3 tablespoons sugar
- 2 teaspoons cornstarch
- 1/2 teaspoon lemon juice
- 1/2 cup pineapple juice reserved from can of fruit
Crust
In a mixing bowl cream butter and sugar.
Gradually add flour/ mix well. Use fingers to press into an ungreased 11" tart pan.
Bake at 300°F° for 25 - 30 minutes or until the crust is lightly browned. Allow crust to cool.
Frosting / Filling
Melt vanilla baking chips adding a tablespoon of vegetable oil to help the chocolate melt more smoothly if needed.
Beat chips and whipping cream. Then add cream cheese and beat until smooth.
Spread over crust and allow to chill for 30 minutes.
Glaze
In a small to medium sized sauce pan over medium heat combine sugar, cornstarch, lemon juice and reserved pineapple juice.
Bring to a boil over medium heat and boil for 2 minutes or until thickened. Stir constantly.
Allow glaze to cool before brushing over fruit. Chill for one hour before serving. Store in the refrigerator.
