Ingredients
2cupsGreek Yogurtvanilla or plain
1cupmilk
1/3cuphoney
1teaspoonvanilla extract
1/2cupblueberries
1/2cup strawberrieschopped
Instructions
In a large bowl stir together the yogurt, milk, honey and vanilla extract.
Taste the mixture and add a little more honey if needed.
Divide half the fruit among 8 1/2 cup popsicle holders. Add 1/4 yogurt mixture to each popsicle holder, then add the rest of the fruit.
Press the fruit down gently to distribute fruit throughout the popsicle. Add more yogurt if needed, but leave 1/4 inch of space for the popsicle to expand during the freezing process.
Freeze the popsicles for several hours, until completely solid.
Notes
Dense fruit like strawberries takes longer to unthaw than less dense fruit like blueberries or the yogurt
Chop dense fruit finely to make the yogurt popsicles as easy to eat as possible
The mixture can be frozen in ice cube trays, small paper cups or popsicle holders
Some of us enjoy eating as a popsicle and some of our family prefer a slushie like consistency when eating
Use any combination of fruit that you enjoy
