Ingredients

  • 6 eggs
  • 1/2 cup milk
  • 1 teaspoon dry mustard
  • 1 teaspoon parsley flakes
  • 1/2 teaspon Kosher salt
  • 1/2 teaspoon pepper freshly ground
  • 3/4 cup Bisquick
  • 1 cup ham diced
  • 7 ounce jar sliced mushrooms drained
  • 3 green onions chopped
  • 1 medium tomato chopped
  • 1 cup sharp cheddar cheese

Instructions

  • Preheat oven to 350°F. Grease an 8-inch square baking dish.
  • Mix eggs, milk, dry mustard, parsley, salt and pepper together with a fork.
  • Add baking mix and stir until batter is a uniform color and there are no lumps.
  • Stir in remaining ingredients. Pour into prepared pan.
  • Bake uncovered about 35 - 45 minutes or until a knife inserted in the center comes out clean. The casserole will be lightly browned and set.
