Bacon, eggs, and potatoes topped with cheese make the best Cowboy Breakfast Skillet! An entire breakfast or brunch recipe can be prepared in an easy one-skillet meal.
In a large skillet cook bacon until crisp over medium heat. Remove bacon, but keep 2 - 3 tablespoons bacon drippings in the skillet. Crumble bacon and set aside.
Add potatoes, salt and pepper to the drippings in the skillet, cook and stir for 2 minutes over medium heat.
Cover and cook, stirring occasionally, until potatoes are browned and tender, about 12 - 15 minutes. About 10 minutes into this time add 1 tablespoon of butter at a time where the skillet is dry as needed.
Make 5 wells in the potato mixture. Break one egg in each well. Cover and cook on low heat for 8 to 10 minutes or until eggs are completely set.
Sprinkle with shredded cheese and crumbled bacon and serve warm right out of the skillet.

If using a cast-iron skillet make sure it is well seasoned before use
