Corn For A Crowd

One of the easiest vegetable side dishes that we make for parties in a roaster is this creamy and delicious Corn For A Crowd.

Ingredients

  • 212 ounces whole kernel corn 26 cups
  • 24 ounces cream cheese 3 blocks
  • 1 cup butter 2 sticks
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper

Instructions

  • Heavily coat a large electric roaster with non-stick cooking spray, especially the corners.
  • Drain cans of corn and pour into the roaster.
  • Pour milk into the roaster and set to 250℉
  • Mix together salt, sugar and pepper and sprinkle across the top of the corn. Stir well.
  • Slice butter and cream cheese over the top of the corn.
  • Cover with the lid and cook for 4 to 6 hours stirring every 30 - 45 minutes.

Notes

-The label on the can estimates 1/2 cup servings, but we find that people typically take closer to 1/4 cup at graduation parties or events with lots of food to choose from. So double this recipe if you have a crowd of big eaters and/or limited food options.
