Slice smoked sausage into coins.
26 ounces Smoked sausage
In a sauté pan with deep sides or in a dutch oven heat vegetable oil over medium high heat and brown the smoked sausage on both sides. Set aside on a seperate plate.
2 tablespoons vegetable oil
Add onion to the pan and sauté for 3 - 4 minutes, add garlic and sauté until tender.
1/2 cup white onion, 1 tablespoon minced garlic
Add chicken broth, whipping cream and undrained fire roasted tomatoes.
2 1/2 cups chicken broth, 1/2 cup whipping cream, 14.5 ounce can fire roasted tomatoes
Season with salt, cajun seasoning and pepper. Stir well.
1 teaspoon kosher salt, 2 teaspoons cajun seasoning, 1/2 teaspoon pepper
Add uncooked box of bow tie pasta and stir gently. Cover and cook over medium high heat for 14 - 16 minutes until pasta is tender.
1 pound bow tie pasta
Stir browned smoked sausage into the pasta.
Remove from heat and stir in cheese just before serving.
2 cups shredded cheddar cheese
Garnish with parsley if desired and enjoy!
