Ingredients

  • 26 ounces Smoked sausage
  • 2 tablespoons vegetable oil
  • 1/2 cup white onion chopped
  • 1 tablespoon minced garlic
  • 2 1/2 cups chicken broth
  • 1/2 cup whipping cream
  • 14.5 ounce can fire roasted tomatoes
  • 1 teaspoon kosher salt
  • 2 teaspoons cajun seasoning
  • 1/2 teaspoon pepper
  • 1 pound bow tie pasta
  • 2 cups shredded cheddar cheese
  • 1 teaspoon parsley optional

Instructions

  • Slice smoked sausage into coins.

  • In a sauté pan with deep sides or in a dutch oven heat vegetable oil over medium high heat and brown the smoked sausage on both sides. Set aside on a seperate plate.

  • Add onion to the pan and sauté for 3 - 4 minutes, add garlic and sauté until tender.

  • Add chicken broth, whipping cream and undrained fire roasted tomatoes.

  • Season with salt, cajun seasoning and pepper. Stir well.

  • Add uncooked box of bow tie pasta and stir gently. Cover and cook over medium high heat for 14 - 16 minutes until pasta is tender.
    1 pound bow tie pasta
  • Stir browned smoked sausage into the pasta.
  • Remove from heat and stir in cheese just before serving.
    2 cups shredded cheddar cheese
  • Garnish with parsley if desired and enjoy!
