Butterscotch Bars

Chewy cookies with a soft center and delightfully crunchy crust make an old fashioned Butterscotch Cookie Bar.

Ingredients

  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup dark brown sugar packed
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup chopped nuts optional

Instructions

  • Grease an 8 x 8" pan and preheat oven to 350°F.
  • Using a sifter or fork, sift flour, then measure. Sift baking powder together.

  • In a separate bowl mix together melt butter.

  • Add egg and vanilla extract to butter and stir.

  • Stir in brown sugar.
    1 cup dark brown sugar
  • Then add dry ingredients and stir well.
  • If using nuts mix them in.
    1/2 cup chopped nuts
  • Spread into a square pan and bake for 15 minutes until the edge is crunchy, but the center is still slightly gooey. Be careful not to over bake.
