Butterscotch Bars
Chewy cookies with a soft center and delightfully crunchy crust make an old fashioned Butterscotch Cookie Bar.

- 1/4 cup butter
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup dark brown sugar packed
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 cup chopped nuts optional
Grease an 8 x 8" pan and preheat oven to 350°F.
Using a sifter or fork, sift flour, then measure. Sift baking powder together.

In a separate bowl mix together melt butter.

Add egg and vanilla extract to butter and stir.

Stir in brown sugar.

Then add dry ingredients and stir well.
If using nuts mix them in.
1/2 cup chopped nuts
Spread into a square pan and bake for 15 minutes until the edge is crunchy, but the center is still slightly gooey. Be careful not to over bake.
