Ingredients

  • 1 1/4 cup bananas mashed
  • 1/2 cup sugar
  • 1/2 cup applesauce
  • 2 eggs
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup chocolate chips plus extra to sprinkle on top

Instructions

  • Preheat oven to 350°F.  Grease 9x9" baking pan.  Mash bananas, add sugar, applesauce and eggs.  Mix well.
  • Mash bananas, add sugar and applesauce.  Mix well.
  • Add eggs and mix again.
  • Slowly add flour, baking soda, salt and cinnamon.  Mix well.
  • Fold in 1/2 cup chocolate chips.  Sprinkle a couple tablespoons of chocolate chips on top if desired.  Bake for 25 - 30 minutes until lightly browned and a toothpick inserted in the center comes out clean.

Notes

  • We like to use overripe bananas that are a bit too soft to eat, but not totally brown
  • Totally brown bananas will have a very strong taste
  • Different pan sizes can be used in this recipe, but baking time will need to be adjusted accordingly
