Our family loves this Farmhouse Carrot Bread Recipe that tastes so sweet and has two cups of carrots in each loaf. 1cupbrown sugar
1cupgranulated sugar
4eggs
1 1/2cupsoil
3cupsflour
2teaspoonsbaking powder
1 1/2teaspoonbaking soda
1/4teaspoonsalt
1/4teaspoonallspice
2teaspoonscinnamon
4cupsfresh grated carrots
Instructions
Mix well brown sugar, granulated sugar, eggs and oil.
In a separate bowl mix flour, baking powder, baking soda, salt, allspice and cinnamon. Slowly stir into wet mixture
Stir in carrots.
Divide batter evenly between 2 loaf pans that have been greased and floured. Bake in a 350°F oven for 1 hour until a toothpick inserted in the center comes out clean.

Do not over mix bread as too much air will be released
Use the listed amount of leavening agents (baking powder and baking soda) - using too much or too little may cause the loaf to be too dense and flat
Grated carrots should be evenly sized to best mix into the loaf
