Chicken and Berries Lettuce Salad

My son and I have both earned ribbons in 4-H cooking contests with this Chicken and Berries Lettuce Salad with Fruity Yogurt Dressing.  The ingredients are so simple, yet the salad tastes absolutely amazing as a main course or side dish!  We love how the simple yet unique yogurt salad dressing ties everything together and makes it more enjoyable to eat a salad!

Ingredients

Chicken and Berries Lettuce Salad

  • 4 cups Mixed salad greens cut in bite sized pieces spring mix or 50/50 blend works well
  • 2 cup Cooked chicken cut into bite sized pieces
  • 1/2 cup Raspberries
  • 1/2 cup Strawberries sliced
  • 1/4 cup Green onions sliced
  • 1/4 cup Slivered almonds
  • Ground pepper optional

Fruity Yogurt Dressing

  • 1 cup Strawberry yogurt we like Yoplait smooth style
  • 1/4 cup raspberries
  • 1/4 cup strawberries
  • 1 tablespoon white wine vinegar
  • 2 teaspoons sugar

Instructions

  • Wash salad greens and fruit. Toss salad ingredients together and sprinkle with almonds.
  • Place all Fruity Yogurt Dressing ingredients in blender. Blend on high speed about 15 seconds or until smooth. Serve over salad and store in the refrigerator.

Notes

  • We like plain grilled chicken the best
  • The smaller the bite-sized pieces of chicken and lettuce the easier this salad is to eat
  • The yogurt salad dressing tastes great for 1-3 days when stored in the refrigerator
  • Store ingredients in separate containers in the refrigerator and mix together when ready to enjoy
  • Adding blueberries to the salad tastes great too
  • Leeks can be easily substituted for green onions
  • Plain yogurt can be substituted for strawberry yogurt, it just won't be as sweet
