Fudge Meltaway Cookies

These Fudge Meltaway Cookies are too good to stop eating!  A layer of graham cracker crumbs, chocolate, butter and coconut topped with a perfectly creamy fudge makes an amazing bar cookie!

Graham Cracker Layer

  • 1/2 cup butter
  • 1 square unsweetened chocolate
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 1 1/2 cups graham cracker crumbs
  • 1 cup coconut
  • 1/2 chopped nuts optional

Creamy Fudge Layer

  • 1/4 cup butter
  • 1 tablespoon milk or cream
  • 2 cups powdered sugar sifted
  • 1 teaspoon vanilla
  • 1 1/2 square unsweetened chocolate


  • Melt 1/2 cup butter and 1 square chocolate in a saucepan.  
  • Blend remaining "graham cracker layer" ingredients into the melted chocolate. Mix well and press into ungreased 9x9 glass baking dish. Refrigerate.
  • Melt remaining chocolate and butter in a saucepan.  Mix in remaining ingredients.  Spread evenly over chilled mixture.  Chill again.  
  • Before chocolate is hard cut into squares.  Chill until chocolate is firm.


  • Melt chocolate over low heat in a saucepan and stir regularly to prevent burning
  • Refrigerate the graham cracker and coconut mixture to allow to chill and set-up
  • Be prepared to spread the soft fudge mixture very quickly because it sets up fast
  • If you would like to make a pattern in the fudge do it quickly without stopping before the fudge begins to set
  • Chill dish again 
  • Before chocolate is hard, cut into square and return to the refrigeration until firm
