Ingredients
1egg
1/2cupmilk
5ouncespackage seasoned croutons
1poundItalian sausage
1/2poundground pork
1 1/2cupscheddar cheese
1canpizza saucedivided
1cupmozzarella cheese
1/2cupmini pepperoni
Instructions
Preheat oven to 350 degrees F. Grease a baking sheet or cover with foil.
Beat egg and milk with mixer until smooth. Add croutons; mix well. Let stand for 5 minutes. Beat until there are no crunchy pieces left
Add Italian sausage, ground pork, cheddar cheese and 1/2 can pizza sauce. Mix well.
Divide mixture in half. Divide each half into quarters to get a total of 8 mini meatloaves. Cup hands and shape each portion of meat into a mini meatloaf.
Place on baking sheet and bake for 25 minutes. Remove from oven and use a meat thermometer.
The finished internal temperature should be 160 degrees F. Cooking time will vary by size of the meatloaf. My meatloaves are typically 150 degrees F at 25 minutes. So I add a tablespoon of pizza sauce, mozzarella cheese, and pepperoni to the top of each meatloaf and return to the oven for another 5 to 10 minutes until the cheese is melted and the internal temperature reaches 160 degrees F.
