Wash and peel potatoes. Slice and then dice into evenly sized pieces.
Submerge in boiling water for 10 - 15 minutes until just tender. Drain and pour into a square casserole dish.
Glaze
Melt butter and stir in maple syrup, brown sugar, salt and pepper.
Pour over sweet potatoes and cover with foil.
Bake at 350°F for about 30 minutes until potatoes have reached desired tenderness.
Notes
-Dish can be glazed, covered and stored in the refrigerator 1-2 days ahead of baking, allow dish to warm up on the counter for about 30 minutes before baking-1/2 cup chopped nuts may be sprinkled on before baking
