Cowboy Breakfast Skillet

Bacon, eggs, and potatoes topped with cheese make the best Cowboy Breakfast Skillet! An entire breakfast or brunch recipe can be prepared in an easy one-skillet meal.

Equipment

Ingredients

  • 7 strips bacon about 1/2 pound
  • 4 cups frozen cubed hash brown potatoes O'Brien
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 5 eggs
  • 3/4 cup shredded Cheddar cheese
  • 3 tablespoons butter

Instructions

  • In a large skillet cook bacon until crisp over medium heat. Remove bacon, but keep 2 - 3 tablespoons bacon drippings in the skillet. Crumble bacon and set aside.
  • Add potatoes, salt and pepper to the drippings in the skillet, cook and stir for 2 minutes over medium heat.
  • Cover and cook, stirring occasionally, until potatoes are browned and tender, about 12 - 15 minutes. About 10 minutes into this time add 1 tablespoon of butter at a time where the skillet is dry as needed.
  • Make 5 wells in the potato mixture. Break one egg in each well. Cover and cook on low heat for 8 to 10 minutes or until eggs are completely set.
  • Sprinkle with shredded cheese and crumbled bacon and serve warm right out of the skillet.

Notes

  • More butter may be used to help potatoes brown but not burn
  • Can add 1/3 cup chopped onion and 2/3 cup chopped green pepper
  • Can chop fresh potatoes and decrease cooking time
  • If using a cast-iron skillet make sure it is well seasoned before use
