Loaded Sweet Potato Casserole
4medium sizedsweet potatoes3 c. mashed
1/2cupgranulated sugar
1/2cupbuttersoftened
2eggsbeaten
1tablespoonvanilla
1/3cupmilk
Crumbly Topping
1/3cupbuttermelted
1cupbrown sugar
1/2cupflour
1cupchopped pecans
Instructions
Peel and boil sweet potatoes until fork tender. Drain; mash potatoes in a large mixing bowl.
Add granulated sugar, the slice butter over top of potatoes and beat well.
Beat eggs and add along with vanilla and milk to potato mixture. Mix well.
Pour into a lined or greased 5 or 6 quart crock pot. Cover and cook on low for 1 1/2 to 2 hours. Stir every hour and be sure to stir just before adding topping.
Crumbly Topping
Mix remaining ingredients, melted butter, brown sugar, flour and chopped pecans.
Sprinkle over potato mixture and add a thin tea towel that covers the top of the crock pot to help absorb excess moisture. Put lid over potatoes to hold lid in place. Cook on low another 1 - 2 hours.
