Pina Colada Cake

This recipe is a fun and easy twist on a classic box of yellow cake mix. My mom is a good cook. This is another quick and easy dessert that she wrote in her personal cookbook years ago. The handwritten instructions were a bit vague, probably because the recipe is so easy!

  • 1 box yellow cake mix bake as directed in 9x13 pan
  • 13.5 ounces can of cream of coconut
  • 12 ounces can of sweetened condensed milk
  • 20 ounces can of crushed pineapple drained
  • 1 container whipped topping
  • 1 cup shredded coconut


  1. Prepare the box of yellow cake mix as directed, use 9 x 13-inch pan. 

  2. Take the small, round end of a wooden spoon and poke about 24 holes in the cake.  Pour cream of coconut and can of sweetened condensed milk over the holes.

  3. Layer 1 can of crushed pineapple, drained.  Follow with whipped topping and sprinkle coconut on top.
