Pumpkin Pie Cake

Pumpkin pie is a traditional holiday dessert. Many people love pumpkin pie, but many people also love cake. This Pumpkin Pie Cake recipe is the perfect combination of two favorites, so it’ a great addition to holiday gatherings.

Ingredients

Cake Layer

  • 1 box 2-layer size yellow cake mix reserve 1 cup
  • 1/2 cup butter, very soft
  • 1 egg

Pumpkin Pie Filling Layer

  • 1 lb 13 oz can pumpkin
  • 3 eggs
  • 2/3 cup evaporated milk
  • 2 tsp cinnamon
  • 1 cup sugar

Crumbly Topping Layer

  • 1 cup reserved cake mix
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 1 cup chopped pecans optional

Instructions

  1. Grease a 9 x 13" baking dish. Set aside 1 cup of yellow cake mix.

  2. Mix remaining cake mix, 1/2 cup butter and 1 egg well and press in the bottom of baking dish.

  3. Mix pumpkin pie layer ingredients together well and spread evenly over cake layer.

  4. To make the crumbly layer - mix cake mix, sugar and margarine together until crumbly.  Sprinkle over filling.  Sprinkle pecans on top.

  5. Bake at 350 degrees for about 1 hour 10 minutes or until set.  Serve warm with whipped topping.

Recipe Notes

*check doneness with a toothpick around 50 minutes to account for variations in ovens and avoid burning the cake.  The cake is done with the toothpick is clean when inserted in the middle.
