With the kids home in the summer we’re always looking for easy healthy lunch ideas using cold meats like turkey or ham. This is a simple lunch recipe idea using turkey in an easy wrap, with roasted veggies and some balsamic flavored salad dressing to give the wrap a nice burst of flavor.
One of the kids is a picky eater, so his healthy lunch was even easier because we just skipped using the salad dressing.
Healthy Lunch Idea
My son is finishing up a 4-H project where he’s studying about eating healthy. Healthy meals include fruit, vegetables, protein, whole grain and dairy.
Sometimes we use whole grain tortillas, this time we had flour tortillas on hand. A tablespoon of balsamic flavored salad dressing added a great pop of flavor. Spinach adds several great nutrients. We used turkey from farm families in western Ohio. And finally a layer of roasted vegetables. We love roasting whatever vegetables we have on hand and keeping them in the refrigerator so they are ready to reheat for a quick lunch like this.
We serve this wrap or our Turkey BLT Wrap with a glass of milk and fruit for dessert so all of the food groups are covered in this easy healthy lunch!
Is Turkey Ethically Raised
This turkey in the deli section at your grocery store is likely raised on a family farm like this somewhere in the United States. A lot of people have seen documentaries or read about farming on the internet, but I grew up on a farm and still didn’t know much about turkey farms. I’ve learned so much by asking questions. Granted I have pretty special access to a husband who knows a lot about the topic, there are other farmers who are good sources of information too.
From what I’ve seen first-hand and the research I’ve done, I believe turkey is ethically raised in the United States. Farms are bigger, but it’s still families that take care of the animals every single day of the year. So we eat meals like this and feel good knowing that we’re supporting family farmers.

Easy Turkey Wrap & Roasted Veggies
- 4 tortillas
- 4 tablespoons balsamic salad dressing
- 1/2 pound sliced turkey
- 1 cup spinach
- 1 cup roasted vegetables of your choice
- Preheat oven to 400 degrees F. and roast vegetables that are lightly coated with olive oil, salt and pepper for 20 minutes. We used leftover roasted vegetables which works great too!
- Spread 1 tablespoon of salad dressing evenly over each tortilla.
- Lay spinach out in a flat layer over each tortilla. Add turkey and roasted vegetables in a row down the center of each tortilla.
- Fold and roll tortilla however you desire and enjoy!
