We love using chocolate chips or chocolate chunks in this recipe. Sometimes chocolate chunks can be a little more expensive or more difficult to find, in that case use chocolate chips.

How to Make Macadamia Chocolate Chip Cookies
- Preheat oven to 325ºF.
- Beat brown sugar, sugar, butter, vanilla and eggs in a mixing bowl.
- Mix flour, cocoa powder, baking soda and salt. Gradually blend into creamed mixture.
- Add chocolate chips or chunks and nuts and mix until just blended.
- Line baking sheet with a non-stick baking mat or grease sheet if not using a liner.
- Use a cookie scoop to drop balls about 2 inches apart.
- Bake for 10 – 12 minutes being very careful not to overbake.
- Use cooking racks to cool completely.
Tips for Making Chocolate Macadamia Cookies
- Chocolate chunks, chocolate chips or semi-sweet chocolate cut into small chunks all work well for this recipe
- Use softened, but not melted butter
- Use a good non-stick baking mat to make baking and cleaning up easier
- A nice cookie scoop makes baking cookies much easier and more uniform
- Do not over bake cookies – watch the first batch very closely to establish an appropriate baking time.
- Cookies should be removed from oven quickly after edges begin to set up, once out of the oven cookies should finish setting up within a couple minutes

Chocolate Macadamia Nut Cookies

- 1 cup brown sugar
- 3/4 cup sugar
- 1 cup butter softened
- 2 teaspoons vanilla
- 2 eggs
- 2 1/4 cups flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 8 ounces chocolate chips or chunks
- 3 1/2 ounces macadamia nuts
Instructions
- Beat brown sugar, sugar, butter, vanilla and eggs in a mixing bowl.
- Mix flour, cocoa powder, baking soda and salt. Gradually blend into creamed mixture.
- Add chocolate chips or chunks and nuts and mix until just blended.
- Use a cookie scoop to drop onto a cookie sheet with a non-stick baking mat or a greased baking sheet about 2 inches apart.
- Bake for 10 – 12 minutes in a 325°F oven. Be sure not to overbake. Use cooking racks to cool completely.
Delicious! I made 18 jumbo cookies out of this recipe using a large scoop and baking in a convection oven at 325 degrees for 14 minutes. They are thick and soft and chewy…just the way I like themI
