We are always looking for easy after school snack ideas and these pizza muffins are a perfect snack for kids!   With growing kids it can be difficult to think of a variety of foods to feed them. This is a cheap and easy recipe that puts a twist on one of the most basic kid foods – pizza.

A box of cornbread mix, pepperoni, cheese and sun dried tomatoes if you’d like (we omitted them) make about 8 to 10 muffins.  We quickly and easily mixed the ingredients by hand, which meant we didn’t need to use many dishes.  The pepperoni and cheese add protein that growing kids need.  So, these make a good addition to a packed lunch for school or serve as a snack.

These muffins tasted great warm or warmed up the next couple days.  We stored them in the refrigerator, not knowing how quickly we would use them.

We used a basic muffin tin like this and some fun wrappers.  Our kids shared them with friends one evening as a snack and everyone enjoyed them!

Pizza Muffin

We are always looking for easy after school snack ideas and these pizza muffins are a perfect snack for kids!   With growing kids it can be difficult to think of a variety of foods to feed them. This is a cheap and easy recipe that puts a twist on one of the most basic kid foods - pizza.

Ingredients

  • 8.5 ounce package corn muffin mix
  • 1/3 cup milk
  • 1 egg
  • 1 cup pepperoni diced
  • 3/4 cup mozzarella cheese shredded
  • 1/4 cup sun dried tomatoes optional

Instructions

  1. Preheat the oven to 380 degrees F.  Line a muffin pan with paper liners.

  2. Mix the corn muffin mix, milk and egg together until barely blended and lumpy.  Gently fold in the pepperoni, mozzarella and tomatoes.  Scoop into the prepared muffin pan, filling cups about 3/4 full.

  3. Bake for 12 to 15 minutes, until golden brown and firm to the touch.  Let cool slightly or serve at room temperature.  Store in the refrigerator to keep fresh longer.
