Our slow cooker makes our life so much easier because we can set it and forget it for a few hours! We like to buy a whole pork loin and cut part of it into pork chops for recipes like this and use other portions for a roast like this recipe!
We love how the tomatoes and seasoning gives the dish an Italian flavor, but it’s cheaper than buying pasta sauce. We did splurge and garnish the dish with fresh basil which we all enjoyed. The baby couldn’t stop eating the basil, she made us all laugh with her new found love of basil.
How to Make Pork Loin in a Slow Cooker
I’ve made pork loin in the crock pot a few times and sometimes it is tough and sometimes it is tender and delicious. I’ve learned that pork loin needs to cook longer with moist heat to become tender. So the same four pound pork loin roast that cooks in about 30 minutes with dry heat in the oven takes 4 to 6 hours on high in the slow cooker. Once it’s fall apart tender feel free to enjoy – even if cooked past the magical internal temperature of 145 degrees Fahrenheit. As farmers we never know when animals will be fed and other chores will be done so we can eat. That’s why this meal is great. Once the pork is cooked the slow cooker can be turned down to low and keep warm until we’re ready to eat.

Italian Pork and Spaghetti

- 4 pound boneless pork loin roast
- 15 ounce petite can diced tomatoes drained
- 3/4 cup Italian dressing
- 4 tablespoons tomato paste
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/4 cup fresh basil chopped
- 1/2 cup shredded parmesan cheese
- 1 pound spaghetti
Spray slow cooker with non-stick cooking spray or use a liner. Place pork loin in a 5 or 6 quart slow cooker. Pour tomatoes over the top.
In a separate bowl mix Italian dressing, tomato paste, sugar and salt. Pour the mixture over the pork loin.
Cook on high approximately 4 to 6 hours until the meat is fork tender.
Cook spaghetti according to directions on the package. Top with pork and sauce mixture. Sprinkle with cheese and fresh basil.
