We all love breakfast for dinner and these pancake ideas take a classic meal to a whole new level for any age!  The new Krusteaz Protein Buttermilk Pancake Mix is much more satisfying than other pancake mixes that I’ve tried, so it makes breakfast night even better!

The two most common meal requests from my son are pancakes and pasta.  I want to make meals that are fun for the kids, but I also want to make healthy meals that include more than one food group.  So, this new protein mix, drizzled with melted peanut butter, a hint of chocolate syrup and served with fresh fruit and bacon is a great meal that our whole family enjoys.  This was actually an amazing combination that may replace using syrup in our home.

This meal is so EASY because with Krusteaz pancakes mixes all you need is water.  Out of eggs or vegetable oil?  No problem these mixes taste GREAT and all you need is water!  Our nine year old son actually mixed up these pancakes very quickly.  He loves helping make dinner.

He is taking a foods and nutrition 4-H project and learning about the different food groups and eating a variety of good foods.  The pancakes are in the grains group, peanut butter is in the protein group, and fruits are in the fruits group.  Add a glass of milk to include the dairy group, have a snack of vegetables at some point in the evening and all of the groups in My Plate are covered!

We do need a wider pancake turner.  Having a wider spatula like this would made this job a bit easier.

This was an AMAZING meal.  We will be making pancakes much more often with these delicious toppings!

brunch idea for families

We were challenged to make breakfast night fun, so we tried a few other ideas.  We tried an option where we covered the pancakes with sprinkles OR added food coloring to the batter, and then used cookies cutters to make fun shapes, but it took longer to make and had to be done by an adult.  We just couldn’t find an easy flavor combination to beat the peanut butter and chocolate drizzled pancakes with fresh fruit!

Pancakes with Peanut Butter & Chocolate Syrup

Ingredients

  • 2 cups Krusteaz Protein Buttermilk Pancake Mix
  • 1-1/3 cups Water
  • 1/2 cup peanut butter melted in microwave
  • 1/3 cup chocolate syrup
  • 1 cup strawberries sliced
  • 3/4 cup blueberries
  • 2 bananas sliced

Instructions

  1. Make pancakes according to instructions on box

  2. Top pancakes with fruit.  Melt peanut butter in microwave safe dish and drizzle over pancakes.  Then drizzle desired amount of chocolate and ENJOY!
